BEAR LICKIN’ BBQ SAUCE

So, you’ve finally got Him coming over for that all-important first dinner. And let’s face it, our hirsute brethren have a refined palette when it comes to caloric intake. Best make a good impression; there are plenty of other issues to fuck up on later. But, not if you don’t get that man to the table and keep him coming back for more.

Now that summer is upon us, it’s a good time to fire up the grill and barbeque some meats. Nothing like chicken, pork, salmon (try halibut this way too) and those big, two-fisted beef ribs. As a dear friend of mine once told me, “It’s all in the sauce”. Pretty sure he meant the BBQ sauce, though, I was much younger then, but I digress.

Let me share with you my own sauce recipe that is sure to please. This one is not for the spice-challenged and takes a few hours to prepare. I make this up by the quarts and freeze it for later use. Something about making this in large batches that seems to yield a better result. I quad the recipe to make a gallon and a half at a time.

1 quart water
1/2 cup granulated white sugar
1/2 cup dark brown sugar
2/3 cup beef soup base

Mix sugars and beef soup base in water in a large pan. Heat until all sugar and beef base is dissolved.

2/3 cup prepared mustard (deli-style or ball-park style preferred)
1/3 cup white vinegar
1/3 cup liquid smoke
2/3 cup worcestershire sauce
1 1/3 cup tomato paste (1 12oz. can)
3 teaspoons ground red chili powder (cayenne; add more to taste)
5 medium marinated jalapeno peppers
Dice the peppers and add remaining ingredients, mix well. Simmer for two (2) hours over a low heat. Longer is better if time permits.

Enjoy and keep the rubber side down.
